Pumpkin Cookies

  • 2 cups flour
  • 1 1/3 cups quick oats
  • 1 tsp. baking soda
  • 1 tsp.cinnamon
  • 1/2 tsp. salt
  • 1 cup butter or margarine
  • 1 cup sugar
  • 1 cup light brown sugar
  • 1 cup pumpkin puree
  • 1 egg, lightly beaten
  • 1 tsp. vanilla
  • 3/4 cup chopped pecans or walnuts
  • 3/4 cup raisins

Preparation -
Combine the flour, oats, baking soda, cinnamon and salt in a large bowl. Mix well. In a separate bowl, combine the butter or margarine, sugar, and brown sugar. Beat till light and fluffy. Add the pumpkin, egg, and vanilla. Mix well. Add flour mixture and mix well. Stir in the nuts and raisins. Drop by tablespoons full onto lightly greased cookie sheets. Bake in a preheated oven at 350° for 12 to 14 minutes or until the cookies are very lightly browned. Cool for about 2 minutes before removing from the cookie sheets.
