Red Beans & Rice

  • 1 pound smoked sausage - sliced into 1/2" to 3/4" pieces
  • 1/2 cup celery - diced
  • 1/2 cup red or green bell pepper - chopped
  • 1/2 cup onion - chopped
  • 1 can chicken broth (14 - 16 oz.)
  • 1 can kidney beans (16 oz.) - drained
  • 1/4 tsp. thyme
  • 1/2 tsp. red pepper sauce (ex.- Tabasco)
  • 2 cups uncooked quick-cooking rice (ex.- Minute Rice)

Preparation -
In a large skillet, over medium heat lightly brown sausage, Add celery, onion & bell pepper & simmer 5 to 7 minutes. Add broth, beans & seasonings. Bring to a boil. Stir in uncooked rice. Cover and remove from heat. Let stand 5 minutes for rice to absorb liquid. Stir and serve. Makes about 4 to 5 servings.
