Jamaican Beef Patties


Pastry

Prepare 1 day in advance or 12 hours prior

2 cups all-purpose flour
11/2 teaspoons curry power
1/2 teaspoon salt
1/2 cup vegetable shortening or margarine
(4to 5 tablespoons cold water)

Meat Filling

1 pound ground beef
2 cloves garlic, minced
2 Scotch bonnet or jalapeno chiles
(seeds removed, finely chopped)
1 teaspoon dried thyme, crushed
1 1/2 teaspoons curry power
1 teaspoon Worcestershire sauce
1/4 cup all-purpose flour
(salt and pepper to taste)
1/2 cup beef broth or water

To prepare pastry, sift together flour, curry powder and salt in medium bowl. Cut the shortening into flour mixture until particles are the size of small peas. Sprinkle in water 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons water can be added if necessary). Wrap doough in plastic wrap and refrigerate at least 12 hours. To make filling, cook and stir ground beef, onion, garlic, Scotch bonnet chile, and thyme in skillet over mdium heat until beef is bworn. Stir in curry powder, Worcestershire sauce, flour, salt and pepper. Slowly stir in broth. Cover and siimmer about 30 minutes. Cool filling. Take dough out of refrigerator 15 minutes before using. Roll out to 1/4 inch thick on a lightly floured board. Cut pastry into 4-inch circles. Heat oven to 400 degrees. Place about 1/12 of meat mixture onto half of pastry circle. Fold other half over the seal edge by pressing down with fork. Repeat with remaining pastry circle. Place the patties on two baking sheets. Bake 30 minutes or until golden brown.
