I am now 42 years old, as of January 20, 2000. Thanks to all who wished me a happy birthday ! I'm 5'2.5", and have a medium frame. When I started back LC'ing on 3/31/98, I was a pretty hefty 211.5 lbs, and I'm sure you can imagine how I felt and looked, being quite short! At this time, I have now lost 87lbs. I now weigh 125, and fluctuate a bit from time to time, but it's pretty steady. I follow pretty strict Atkin's, and NEVER subtract fiber carbs. I probably won't ever go back to eating much in the way of simple carbs, ie; bread/rice/pasta. I have berries on the odd occasion, have tomatoes on my salads, and have Wasa's about once a month. I generally have meats/dairy/LC veggies/protein shakes/Atkin's bars/macadamia nuts, and the like. I ate like this for years in the early-mid 80's, and wish I hadn't stopped. I never had a weight problem 'till I did. After Rachel, now age 2 years, was born, my Thyroid took a dive, and my system crashed so much that I gained a HUGE amount in just a year. I hadn't ever had a serious weight problem until then, and it became obvious to me that I had a real sensitivity to carbohydrates, as eating Lowfat (LF), Highcarb (HC), was making me continue to gain. As soon as I dusted off my old copy of Dr. Atkin's Diet Revolution, the lightbulb came on, and the weight came off ! I bought DANDR, Protein Power, and Corinne T, Netzer's Complete Food Counts, and changed my lifestyle, for good. The easiest way to take the bull by the horns, so to speak, is to invite over your friends or relatives, who have no problem with Insulin Resistance, and literally clean your kitchen of the offending high carb foods. The recipients will be thrilled, and you will have temptation gone. Go to the store, and buy only the foods that are allowed in Induction. Remember to read labels ! All products are not equal ! You would follow the 2 week Induction program first, staying at approx. 15-20 carbs per day. It is well detailed what you can and cannot eat. It is a really great program, with foods like steak, pork, chicken, eggs, fats, dairy, leafy and cruciferous vegetables (e.g., broccoli, brussel sprouts, cabbage, cauliflower, collards, kale, kohlrabi, mustard greens, rutabagas (swedes) and turnips.) These vegetables are good sources of fiber,as well as vitamins and minerals. Rutabagas and turnips are higher in carbs, and should be used with care. There are many medical reports and test cases that testify that this is a healthy and positive approach for those who feel that they may want to lose weight, lower their cholesterol, or just acquire better overall health. Basically as you can see, you eat lots of protein, fats, and dairy. The carbs you are allowed are in veggies, some nuts and naturally occuring in dairy, spices and some condiments. There are many hidden carbs that most people never think about. Fruit and fruit juice is loaded, as is things like ketchup, many barbecue sauces, sodas, etc. Your body can't tell a handful of sugar from a piece of bread. The chemical breakdown is still carbs, and your body excretes insulin promoting the retention of fat. It is an endless cycle. The recipes are a compilation from the various LC lists that I subscribe to, as well as some of my own. It is a necessary thing to acquire at least one of the books relating to this approach, such as DANDR, Protein Power, Neander-Thin, Carbohydrate Addicts Diet or Sugarbusters. It is also quite helpful to have on hand Corrine Netzer's Complete Food Counts, or Carbohydrate Food Counter.
