Spinach New Potato Salad
Serves 2
From the kitchen of Jessy Greene
Ingrediants:
8 red new potatoes, quartered
bunch of spinach
1/4 qtr. red onion
2 tomatoes
bunch of rosemary
2 cloves of garlic
balsmic vinegar
honey
mustard
goat cheese
1/4 cup of pinenuts
olive oil
Lie potatoes and pinenuts on cookie sheet. Brush w/olive oil. Cover w/finely chopped rosemary & garlic. Bake at 350 degrees until brown. Cool. Cut spinach, red onion & tomatoes. Add potato mixture to spinach mixture. Add goat cheese. Make dressing w/olive oil, balsamic vinegar, honey & mustard. Use common sense & your own personal taste for amounts. Season salad to taste.
