Human Health + Diseases Caused by Consuming Animal Products

The meat, dairy, and egg industries used short cuts such as drugs, hormones, and chemicals. Because of this pathogens which are not killed by antibotics, are emerging. Millions of people are infected and thouslands die every year from contaminated animal producs.

New diseases are being amplified by animal farming practices. A few examples of theese are "Mad Cow Disease" (bovine spongiform encephalopathy or BSE), Creutzfeldt-Jakob Disease (CJD), and Avian influenza.

Some of the most common diseases caused by consumption of animal products are by E. Coli, Campylobacteriosis, and Salmonella so we have written a detialed description of theese diseases below.

E. COLI

Escherichia coli is caused by eating undercooked or contaminated ground beef, drinking raw milk, and contaminated water. The organism lives in the intestines of cattle. Contaminated meat looks and smells normal. Although the number of organisms required to cause disease is not known, it is suspected to be very small. infection often causes severe bloody diarrhea and abdominal cramps; sometimes the infection causes nonbloody diarrhea or no symptoms. Usually little or no fever is present, and the illness resolves in 5 to 10 days But in children under 5 years of age and the elderly, the infection can also cause hemolytic, in which the red blood cells are destroyed and thekidneys fail. Hemolytic can lead to life long problembs such as high blood pressure, seizures, blindness, paralysis, and the effects of having part of their bowel removed.

CAMPYLOBACTERIOSOS

Most cases of campylobacteriosis are associated with handling raw poultry or eating raw or undercooked poultry meat. A very small number of Campylobacter organisms (fewer than 500) can cause illness in humans. Even one drop of juice from raw chicken meat can infect a person. usually related to drinking unpasteurized milk or contaminated water. Most people who get campylobacteriosis recover completely within 2 to 5 days, although sometimes recovery can take up to 10 days. Rarely, some long-term consequences can result from a Campylobacter infection. Some people may have arthritis a rare disease that affects the nerves of the body beginning several weeks after the diarrheal illness. paralysis that lasts several weeks and usually requires intensive care.

SALMONELLA

Samonella is usually found on eggs. Eggs look normal but if they are eatern raw or undercooked they can cause illness. A person infected with the Salmonella enteritidis bacterium usually has fever, abdominal cramps, and diarrhea beginning 12 to 72 hours after consuming a contaminated food or beverage. The illness usually lasts 4 to 7 days, and most persons recover without antibiotic treatment. However, the diarrhea can be severe, and the person may be ill enough to require hospitalization. The infection may spread from the intestines to the blood stream, and then to other body sites and can cause death unless the person is treated promptly with antibiotics. In eldery, infants and people with wear immune systems severe illness can set in. Most of the deaths caused by Salmonella enteritidis have occurred among the elderly in nursing homes. One in 50 average consumers could be exposed to a contaminated egg each year.
