Did you know that cooking foods destroys much of their nutritional content? Cooking destroys about half the protein of raw foods, as well as many of the phytonutrients. Microwaving broccoli, for example, destroys as much as 98 percent of the anti-cancer compounds that are found naturally in the plant. While steaming some plants helps unlock certain nutrients (such as lycopene in tomatoes), foods deliver far more nutrition overall when they're consumed in raw form.
It doesn't mean we all have to follow a 100 percent raw foods diet (I certainly don't), but it is beneficial to include some raw food component with each meal.
