2 c. sugar
1 c. oil
3 eggs
2 c. shredded zuchinni
2 tsp. vanilla
2 c. flour
1 tsp. salt
2 tsp. baking soda
1/4 tsp. baking powder
3/4 c. rolled oats
1 c. chopped walnuts
In a large bowl combine sugar, oil, eggs and tsp. vanilla.
Stir well, Add flour, salt, baking soda, baking powder and
rolled oats,mix until combined then stir in zuchinni.
Mix until blended. Fold in walnuts.
Spoon batter into greased and floured 10 x 15 inch jelly roll pan.
Bake 15-20 min. or longer until golden brown.
Toothpick when inserted into the middle should come out dry.
Let cool in pan.
Cream Cheese Frosting:
3 oz. pkg. cream cheese
1/2 c. butter or margarine
1/4 tsp. almond extract
2 tsp. vanilla
2 1/2 c. icing sugar
Beat cream cheese and butter, beat in icing sugar and flavorings.
Frost bars when cool.
These freeze well.
