ARROZ CON LECHE

Ingredients:

1 Pk. Valencia type rice (16 Oz)

4 Cups of milk

2 cinnamon sticks broken in pieces

1 Teaspoon vanilla extract

1 can evaporated milk

1 can condensed milk

1 Cup of sugar

1 1/2 Cups of water

pinch of salt

Cinnamon powder

lime rind (may substitute lemon rind)

 

Preparation:

 

In a large pot wash your rice and put to cook at medium to low heat with the water, the pinch of salt and the lime rind.

Stir often, when rice is soft, add the milk, cinnamon sticks and vanilla extract. Bring it to the boiling point and then lower the heat to medium low. Let it cook for a while then add the sugar and the condensed milk and continue stirring. Let it simmer for a while uncovered, add the evaporated milk and let it continue cooking for a while. It will thicken up.

 

Pour into a big bowl or individual servings. Sprinkle cinnamon powder on top.

 

Serve warm or at room temperature.

 

Note: This is my mother's recipe. It is very rich and creamy.

           Stir often so it will not stick to the bottom of the pot.
