As root:

#mondoarchive or

#mondoarchive -O -c 16 -g -s 700m -o -d '0,0,0' -E /usr/portage/distfiles

NOTE: You must have loopback or loopfs (loopback filesystem support) compiled either as a module/statically in your kernel or running mondoarchive will fail. I'm just making note of this since someone with a slower system would only figure this out half-way through running it.

This command burns a full bare-metal backup iso to a cdr at speed 16x to 700m sized media on SCSI device 0,0,0 with the exclusion of the /usr/portage/distfiles directory using the pretty graphical mode.

You can also run it without flags and it's pretty intelligent at figuring stuff out by its lonesome. It will scold you for miscellaneous things until you figure out flag you're missing, modules you forgot to load, not mounting your /boot directory etc. Easily the most complete and amazing backup tool I have ever used.
