Potatoes Delmonico
Ingredients

1/4 cup butter
3 Tbsp. flour or cornstarch
2 tsp. salt 
1/4 tsp. pepper
1/2 tsp. garlic salt
4 hard boiled eggs, sliced
4 cups cold cooked potatoes, sliced or diced
1 1/2 cups hot milk
1/2 cup grated cheese (your choice)


Preparation:

Melt butter. Add flour and mix until smooth.  
Add seasonings and hot milk.  Cook until smooth and thick.
Then simmer about 5 minutes.
Blend the grated cheese into sauce.
Add eggs and potatoes.
Pour into medium greased casserole dish.
Top with more grated cheese and paprika.
Bake at 400 degrees F for 20 minutes, uncovered.
