-Dill Cornmeal Dumplings-
(These are great to add to any soup or stew)
1 1/4 cup Flour
1/3 cup Yellow cornmeal
1 tabl. Dill -- finely chopped
2 1/2 teas. Baking powder
1/2 teas. Salt
3 tabl. Vegetable shortening or butter (chilled)
1 cup Milk
In a medium bowl, combine the first 5 ingredients.
With 2 knives or your fingers, cut in the shortening
until the mixture resembles coarse crumbs. Add the milk,
stirring with a fork, just until the mixture holds together.
With a large spoon, drop dumpling batter in 8 spoonfuls
over the stew or soup. Simmer over medium-low heat, covered,
about 15 minutes, or until the dumplings are done.
