The Elkhorn-Waterloo Assembly #38 Cookie Jar




When new girls are initiated into our Assembly, we tell them that-
"Rainbow is like a cookie jar...
you only get out of it what you put into it"


Welcome to our cookie jar page-you will find some of our favorite recipes from some of our favorite cooks. We would like to honor here some of the people who help support our Assembly but sometimes get very little credit. This page is for the Advisory Board members, the Masonic Lodge and Eastern Star members, the parents, and the friends of our Assembly who cook, bake, and decorate at our dinners, refreshment times, bake sales, or whenever we need goodies. We also would like to thank those who do the most important job at all these events. Those who
CLEAN UP !!!!


So, thanks to all of you, and we hope you will enjoy some of our favorite recipes. Keep checking back, we will be adding more


COOKIES AND BAKED GOODIES



Chocolate Chip Cookies
3/4 C. shortening
1 1/4 C. firmly packed brown sugar
2 T. milk
1 T. vanilla
1 egg
1 3/4 C. all purpose flour
1 t. salt
3/4 t. baking soda
1 C. semi-sweet chocolate chips
1 C. pecan pieces
  1. Heat oven to 375 degrees F.
  2. Cream shortening, brown sugar, milk, and vanilla in large bowl,blend until creamy. Blend in egg.
  3. Combine flour, salt and baking soda. Add to creamed mixture, gradually. Stir in chocolate chips and nuts.
  4. Drop rounded tablespoonfuls of dough 3" apart on ungreased baking sheet
  5. Bake at 375 degrees F. for 8 to 10 minutes. DO NOT OVERBAKE.
  6. Cool on baking sheet for 2 minutes. Remove to cooling rack.
Makes 3 dozen 3 inch cookies
A favorite old standby--everyone love thems!!


Ginger Snaps
3/4 C. shortening
1 C. sugar
1 beaten egg
1/4 C. light molasses
2 C. sifted all purpose flour
1/4 t. salt
2 t. baking soda
1 t. cinnamon
1 t. ground ginger
1t. ground clove
  1. Heat oven to 375 degrees F.
  2. Cream shortening, and sugar, add molasses and egg beat well
  3. Sift dry ingredients and add to creamed mixture, gradually.
  4. Roll into small balls and dip in sugar
  5. Place on cookie sheet 2 inches apart
  6. Bake at 375 degrees F. for 15 minutes.
Makes 3 dozen cookies


Cake Mix Cookies
1 box German Chocolate cake mix
1/2 C. cooking oil
2 eggs
1/2 C butterscotch chips
1/2 C. semi-sweet chocolate chips
1/2 C. shredded coconut
1/2 C. chopped walnuts
  1. Heat oven to 350 degrees F.
  2. Mix together cake mix, oil, and eggs
  3. Stir in chips, coconut and nuts.
  4. Drop rounded tablespoonfuls of dough 3" apart on lightly greased baking sheet
  5. Bake at 350 degrees F. for 8 to 10 minutes..
  6. Cool on baking sheet for 2 minutes. Remove to cooling rack.
Makes 3 dozen 3 inch cookies
This one is fun to try your own combinations !!
Try yellow cake mix with oatmeal, raisins, and nuts
Cocolate cake mix and M&Ms
or devil's food cake mix with chopped maraschino cherries.
The possibilities are limitless !!



SALADS
So, We all know about those salad suppers.
How many have you been to? Tired of all those pasta and jello salads??? Here are some ideas.

Copper Penny Carrot Salad
2 lbs. carrots, sliced into rounds
1 medium green pepper, diced
1 medium onion
1 can tomato soup
3/4 C. sugar
1/2 C. cider vinegar
1/4 C. salad oil
1 t. yellow mustard
  1. Cook carrot slices until crisp tender
    DO NOT OVERCOOK !!!!
  2. Mix tomato soup, sugar, vinegar, oil, and mustard
  3. Pour over carrots
  4. Set refrigerator overnight
  5. Makes lots
  6. This will keep at least a week in refrigerator
This one is my favorite, makes lots, and keeps forever, great for large groups


Marcia's Kraut Salad
2 cans Bavarian style sauerkraut
4 C. sliced celery
1 large onion sliced thin
1 can red pimento chopped
1 medium green pepper chopped
1 1/2 C. sugar
1/3 C. cider vinegar
  1. Drain kraut and cut across several times with sharp knife
  2. Combine with remaining ingredients
  3. Set in refrigerator overnight
Hints: Plain kraut can be used add 1 T. caraway seed.
This is another one that makes lots, can be made in advance, and keeps forever

Cranberry Relish
1 pkg. fresh cranberries
1 lg. orange including rind
1 lg. apple not peeled(tart apples are best)
1 C. sugar
1 T. lemon juice
1 C. coarsley chopped walnuts or pecans
  1. Chop cranberries, orange, and apple in food chopper or processer until fine
  2. In medium size bowl stir in sugar, lemon juice and nuts
  3. Set in refrigerator overnight -freezes well too.
Variation: add 1 can drained pie cherries and 1/2 C. finely chopped celery
in black cherry or raspberry jello-
be sure to use drained liquid from cherries to make up some of the cold water.
Yet another of those fast, do-aheads, will keep forever type salads--
a Rainbow Mom's salvation for those potluck dinners at Holiday time


Snicker Apple Salad
3 green apples unpeeled cut into chunks
3 red apples unpeeled cut into chunks
2 large bananas cut up
1 lg ctn, Cool Whip
1 pkg small Snicker Candy Bars or 3 lg bars, cut up
Combine all ingredients and stir in Cool Whip
This is a Grand Travels favorite --always rave reviews
