A Tea Tradition... Legend has it that the delightful flavor of tea was discovered when leaves accidentally fell into a pot of boiling water. If this is true, what a lucky break for the rest of us! True teas are made from the dried leaves of the Camellia sinensis, a cousin of the camellia flower that many of us are familiar with. Herbal "teas" contain no true tea leaves, and are more accurately called tisanes or herbal infusions. Created from any number of herbs and spices, the botanical ingredients are combined to create exciting flavors and aromas in a rainbow of colors.

To make the perfect cup of tea, start with a preheated pot or cup (simply fill your teapot or cup with very hot water and let it stand for a moment). Use fresh cold water, and bring it to a rolling boil. Don't let it boil too long! It will boil away the flavor and result in a flat-tasting cup of tea. Pour boiling water on the tea leaves or tea bag. Brew for 3 to 5 minutes. For green teas, your water should be a bit cooler, and only steep for 1 to 3 minutes.

"Boba" Tea Most of the time, if you find something chewy in your drink, it's time to get a new glass. Not this time! Boba tea, or "black pearl" or "bubble" tea, originated in Taiwan nearly two decades ago, is a frothy mix of tea, milk, sugar, and fruit syrups, with small marbles of tapioca. Yes, tapioca.
