Grilled Salmon and Baked Potato with Salsa
Total preparation time: 30 minutes
Serves 8
8 medium baking potatoes (russet or Idaho), unpeeled and well scrubbed Eight 7-ounce salmon steaks 2/3 tablespoon olive oil 2 2/3 tablespoons Dijon mustard 1/2 cup nonfat sour cream 1/2 cup salsa Prepare grill.
Prick each potato several times with a fork and wrap individually in aluminum foil. Place on grill 20 to 25 minutes, or until fork tender.
Meanwhile, brush salmon with olive oil and mustard. Grill 5 minutes on one side, turn, and continue grilling 5 to 7 minutes or until fish flakes easily to fork or is no longer translucent. Top each potato with 2 tablespoons each of sour cream and salsa, and serve with cooked fish.

Sesame Marinated Salmon
Ingredients 1 Tbsp. sesame seeds, toasted 4 cloves garlic, chopped 4-5 green onions, minced 1/4 c. light soy sauce 3 tsp. honey 1/2 tsp. ground ginger 1 lb. salmon fillet, cut into 4 pieces lemon wedges
Directions Combine seeds with garlic, onions, soy sauce, honey and ginger in a zip bag. Mix well and add salmon to marinate up to 2 hours in refrigerator. Reserve 2 Tbsp. of marinade for basting. Heat broiler or grill. Place salmon on broiling pan or grill basket. Cook 10 minutes or until fish flakes. Serve with lemon wedges.
Zesty Salmon Burgers
1 can (14-3/4 ozs.) salmon, drained, skin and bones removed or FRESH. 2 eggs 1/2 cup dry bread crumbs 1/4 cup finely chopped onion 1/4 cup mayonnaise 1 to 2 tablespoons prepared horseradish 1 tablespoon diced pimientos, optional 1/4 teaspoon salt 1/8 teaspoon pepper 2 tablespoons butter or margarine
Directions 4 kaiser rolls, split Lettuce leaves Combine the first nine ingredients; mix well. Shape into four patties. In a skillet over medium heat, cook patties in butter until browned, about 6 minutes on each side. Serve on rolls with lettuce. Serving Size: 4
