Baby Shower Brunch

I recommend any of the following recipes, not only for baby and bridal showers, but for any special occasion that requires an appetizer .

Cucumber Brie Tea Sandwich

1/2 seedless cucumber

8 oz brie cheese, cut into 1/4" pieces

1/4 cup finely chopped green onions with tops

1/4 cup oil and vinegar dressing

3/4 t chopped fresh or 1/4 t dried dill weed

4 t sweet butter, softened

4 slices rye bread or pumernickle

salad greens cut cucumber lengthwise in half. Cut each half into thin slices. Toss cucumber, cheese, onions, dressing and dill weed. Spread 1 t sweet butter on each slice of bread. Top with salad greens. Spoon cheese mixture onto greens. Garnish each sandwich with 1 cooked shrimp and fresh dill weed if desired. Servings 4 open-faced sandwiches.

Variation:

Cut rye bread into 3" squares and serve as finger sandwiches if desired. Great with tea parties.

Vegetable Healthy Pizza

1 package of 8 crescent rolls.

1 package of dry Ranch dressing

1/2 cup Miracle Whip

8 oz package cream cheese-softened

Chopped fresh brocoli, califlower, tomatoes, carrots, grated cheddar cheese Press crescent rolls into a 12" pizza pan. Bake at minimum package directions. Mix Miracle Whip, cream cheese and dry Ranch dressing together. Spread on cooled crust. Sprinkle vegetables and cheese on top. Serve cold or room temperature.

Fruit Lovers Pizza

1/4 cup powdered sugar

1 package sugar cookie dough

1 8 oz package cream cheese

1 carton cool whip

4 or 5 kiwis

1 carton strawberries Press cookie dough onto 12" pizza pan and bake according to directions on package (roughly 375 degrees for 10 min). Let cool. Mix softened cream cheese, 1/4 c sugar, fold in cool whip. Spread over crust. Chop fruit and sprinkle on top. Refrigerate until ready.

Mini- Ham-Quiche

1 Unbaked 9" pie shell

1/2 pound cubed Ham

Garlic, salt, pepper to taste

2 eggs, beat

6 oz Monterey Jack grated cheese

2 T instant onion

1/2 cup mayonnaise

1/3 cup milk Bake pie shell for 5 minutes at 400 degrees. Place ham evenly along bottom of shell. Sprinkle cheese on top and sprinkle onion flakes, garlic, salt and pepper over ham and cheese mixture. Mix mayo, milk and eggs and pour over pie. Bake at 400 degrees for 20 minutes. Reduce heat to 300 degrees and bake until firm. Let stand about 10 min before cutting into wedges. For mini tart size-fill each mini unbaked shell as directed above but bake at 350 degrees for 20 min then place on wax paper.

Ham & Cheese Puffs

1 tsp baking powder

8 oz cream cheese

1 egg yolk

Dash of salt

Large underwood deviled ham

Mayonnaise

Pepperidge Farm regular sliced bread Mix baking powder, cream cheese, egg yolk and salt together until smooth. Cut bread into small rounds. Spread thin layer of mayo on rounds, then deviled ham, then cream cheese mixture. Freeze. Bake from freezer at 375 degrees for 12 min (for best results, use air bake sheet).

Carmel Apple Dip

1 package (8 oz) cream cheese, softened

1/2 cup apple butter

1/4 cup packed brown sugar

1/2 tsp vanilla

1/2 cup peanuts, chopped

5 apples, wedged Combine all ingredients, except peanuts and apples, in 1 qt bowl; mix well. Chop peanuts, add to batter. Mix well; chill. Wedge apples; arrange around dip and serve.

Artichoke Dip

1 cup sour cream

1 cup mayonnaise

1 jar marinated artichoke hearts (chopped)

5-6 oz fresh parmesan cheese

Garlic powder

Green onions Combine all ingredients (including artichoke hearts juice) and microwave 3-5 minutes, stirring occasionaly.

Hot Crab Dip

2 8 oz packages cream cheese

1/3 cup mayonnaise

1 1/2 tsp prep mustard

3 T sauterne wine

4 tsp powdered sugar

1/2 tsp salt

1/4 tsp garlic salt

1/2 tsp onion juice

2 cans crab meat Cream together cream cheese, mayo and wine. Add seasonings. Fold in crab meat. Heat in double boiler, chafing dish or 325 degrees inoven for 20 minutes. Serve with firm crackers.

Chocolate Covered Stawberries

Choose a bunch of delicious looking strawberries. The very large, very red ones are the best. Purchase a container of chocolate discs. These are sold at any grocery store and are usually found in the fruit section. These chocolate discs are made especially for dipping with strawberries. Follow the directions on the container for melting the chocolate. Dip the strawberries in the melted chocolate and place on wax paper. Allow the chocolate to harden before serving. Bananas can also be used

Sweet & Sour Meatballs

Meatballs

2 lbs ground beef (as fat free as possible)

1 cup crushed Corn Flakes

1/3 cup dried parsley flakes

2 eggs

2 T soy sauce

1/4 t pepper

1/2 t garlic powder

1/3 cup ketchup

2 T minced onionMix all ingredients and shape into small balls. Place on oven grill pans and bake at 350 degrees for 30 min. While this is baking you can make the sauce.

Sauce

1 can jelled cranberry sauce

1 12oz jar chili sauce

2 T brown sugar

1 T lemon juiceMix all ingredients in a saucepan. Heat, stirring to break up cranberry sauce (use a wisk). Drain meatballs if necessary and place in a crockpot with sauce poured over top. Ready to serve after this heats up in the crockpot.

Punch Bowl

Lime Punch

2 16oz liters 7-up

2 qts pineapple juice

1 gal lime sherbertMix 7-up and pineapple juice in large punch bowl, then scoop in lime sherbert. Makes 25 cups.

Champagne Punch

1 bottle champagne

2 cans frozen 6 oz orange juice-thaw

1 can frozen 6 oz lemonade-thaw

6 cups of Club Soda

1/2 gal orange sherbert

1 package whole frozen strawberriesMix orange juice, lemonade and Club Soda in a large punch bowl. Add champagne then sherbert then strawberries.

English Scones

3 cups unbleached flour

1/2 cup sugar

1 T baking powder

1/2 tsp salt

3/4 cup (1 1/2 sticks) unsalted butter, chilled and cut into 1/2" pieces

4 oz cream cheese, chilled

1 egg

1/2 cup + 2 T buttermilk Variations:

Strawberry Scones:

1 9 oz jar strawberry fruit spread

2/3 cup frozen strawberries, chopped into 1/2" pieces

Peach Apricot Scones

1 9 oz jar apricot spread

2/3 cup dried peaches, chopped into 1/2" pieces

Blueberry Scones:

1/2 cup frozen blueberries

Onion Herb Scones:

1 T dried basil

1 T dried thyme

1 T dried oregano

1 small onion, peeled and finely chopped

Preheat oven to 400 degrees. Grease large baking sheet. In large bowl, combine flour, sugar, baking powder, and salt. Add butter and cream cheese and mix just to combine. Dough will be lumpy. Add egg and buttermilk and mix 2-3 minutes until dough forms a ball. Add 1 of the variations listed and stir just to combine. Turn dough out onto lightly floured surface. Using floured rolling pin, gently roll out to 1/2" thickness. Do not handle or roll dough any more than necessary to prevent toughness. Cut scones into 2" squares. Place on prepared baking sheet. Bake 10 minutes. Reduce oven temperature to 375 degrees and continue baking 15 minutes or until golden brown. Remove from oven and cool on baking sheet for 10 minutes then cool on rack. Serve warm. Great for brunches or tea parties.

English Egg Salad Sandwiches

Using your favorite egg salad recipe, add dill weed to taste. Serve on 2" squares of pumpernickel bread.
