This begins a new year! Last year was pretty busy for the board. We lost 2 great hosts, and appreciate all their hard work they put into Stay at Home Parenting board. We also gained 2 new hosts!! April and HeatherAnne, they are much appreciated for their wanting to be a host for Sahp! We will also be doing crafts for this month, they will be listed at the bottom of this page. Also check for our the great recipes that will be listed! Can't wait to start a new year!!

Monthly Recipes
Dinner Made Easy
Easy Lasagna

1 lb. ground beef
3 1/2 c. (32 oz.) thick spaghetti sauce
1 1/2 c. water
2 c. (15 oz.) Ricotta cheese
3 c. (15 oz.) shredded Mozzarella
1/2 c. grated Parmesan cheese
2 eggs
1/4 tsp. salt
1/4 tsp. pepper
8 oz. lasagna, uncooked
Preheat oven to 350* Brown beef in saucepan; drain off excess fat. Add sauce and water; simmer about 10 minutes. Combine remaining ingredients, except lasagna, for filling. Pour about 1 cup sauce on bottom of 9x13x2-inch baking pan.
Layer 3 pieces of uncooked lasagna over sauce; cover with about 1 1/2 cups sauce. Spread half of cheese filling over sauce. Repeat layers of lasagna, sauce and cheese filling.
Top with layer of lasagna and remaining sauce. Cover with aluminum foil and bake at 350 degrees for 50-60 minutes. Remove foil; bake about 10 minutes longer. Allow to stand 10 minutes before cutting.

For the Kids
Kid's Mac n Cheese
1 1/2 c. elbow macaroni (or other kids favorite shape)
4 tbsp. butter, divided
1/4 c. all-purpose flour
3 c. milk
1 tsp. salt
1/4 tsp. freshly ground pepper
Pinch ground red pepper
1 1/2 c. shredded sharp Cheddar cheese
1/4 c. freshly grated Parmesan cheese
1/3 c. plain dry bread crumbs
Preheat oven to 375 degrees. Cook macaroni in boiling salted water in large saucepan just until tender, 8 minutes. Drain and rinse under cold water. Meanwhile, melt 2 tablespoons butter in large saucepan over medium heat. Stir in flour and cook, stirring 1 minute. Gradually whisk in milk, salt and peppers.
Bring to boil, whisking. Boil 1 minute. Remove from heat and whisk in cheeses until melted and smooth. Add macaroni. Pour into shallow 2 quart baking dish. Melt remaining 2 tablespoons butter. Stir in bread crumbs and sprinkle over macaroni. Bake 30 minutes. Let stand 10 minutes. Makes 8 servings.

Freeze it and Forget it
Chicken Pot Pie

1 pkg frozen peas & carrots
1 8oz can small whole onions, drained
1 small can mushroom pieces
2 cups cooked & cut-up chicken pieces
2 cups chicken gravy
Pie crust (frozen or homemade)
Combine all ingredients well and pour into 9" pie pan. Cover with pie crust, pressing edges into foil pan. Freeze as is for one hour, remove, wrap with freezer wrap and label, then freeze.
On cooking day:
Remove one and a half hours before baking, remove from freezer to thaw. Preheat oven to 450F. Cover edges of pie crust with foil to prevent the crust from burning. Bake for 1 hour and 15 minutes, or until crust is brown and mixture inside is hot. Remove from oven and allow to sit for ten minutes before cutting and serving.

Tasty Treats
Puppy Chow

1 (12 oz.) bag chocolate chips
1/2 c. peanut butter
1/2 c. butter
9 c. Rice Chex cereal
2 c. powdered sugar
Melt chocolate chips, peanut butter together in microwave on high power for 1-1 1/2 minutes. Stir after 1 minute. Pour mixture over Rice Chex and mix until coated. Put powdered sugar in large paper bag and add cereal mix. Shake until coated. Place on cookie sheets to dry.
