Recipe of the Month

Okay, after a long break (don't ask) the recipe is finally on the right month!
The archives have been updated to show what should have been here but wasn't, so check them out!
April's recipe is for Pesto Pronto. A dish that you grown-ups may be willing to try,
but if you have a picky eater at your house (like I do) it probably won't reqire
cooking an entire extra main dish. To satisfy the picky eater, just reserve part of
your pasta and pour marinara sauce over it -- what kid doesn't like spaghetti?
This recipe makes 6 servings, but if you don't need that much, it's easily halved too.

2 c. tightly packed fresh basil leaves
2 tbsp. pine nuts or walnuts
1/4 c. olive oil
1/3 c. freshly grated Parmesan cheese
2 garlic cloves, minced
salt
ground pepper
1 pkg. (1 lb.) your favorite pasta, cooked and drained
Basil leaves for garnish (optional)

In blender or food processor, combine first 5 ingredients;
process until smooth. Stir in salt and pepper to taste.
Toss immediately with hot pasta. Garnish with basil leaves.
