Apple Pie
- 8 cups peeled apple wedges
- 1 T. lemon juice
- 1/2 cup sugar
- 1/2 cup brown sugar
- 3 T. flour
- 1 tsp.cinnamon
- 1/4 tsp.ginger
- 1/4 tsp.nutmeg
- pie dough for a double-crust pie
- 1 T. butter or margerine
Preparation -
In a large bowl, toss the apple wedges with the lemon juice. Mix the sugars, flour and spices together. Add the mixture to the apple wedges and gently stir to coat. Roll out half of the dough and place it in a deep-dish 9" pie dish. Spoon the apple mixture into the dough lined pie dish. Dot with butter or margerine. Roll the remaining pie dough and place it on top. Flute the edges and cut spoke-like slits in the top crust. For extra appeal, if desired - brush the top crust with one lightly beaten egg white and sprinkle
with sugar. Bake in a preheated oven at 400º for 10 minutes. Reduce oven temp to 375º and bake for 35 more minutes.
