Peanut Butter & Jelly Bars
- 2-1/4 cups flour
- 3/4 tsp. baking soda
- 3/4 tsp. salt
- 1/2 cup butter
- 1-1/4 cups brown sugar
- 3/4 cup peanut butter
- 3 T. milk
- 1 T. vanilla
- 1 egg
- 1 cup grape or strawberry jam
- 1/2 cup quick cooking oats
Preparation -
In a medium bowl combine the flour, baking soda, and salt; set aside. In another bowl combine the butter, brown sugar, peanut butter,
milk, and vanilla. Beat with an electric mixer at medium speed
for about one minute. Add the egg and beat again.
Blend in the flour mixture on low speed. Spread about 2/3 of this dough mixture in the bottom of a greased 9" x 13" baking pan. Spread the
jam evenly over the dough to within 1/4" of the edges.
Mix the remaining dough with the quick oats. Spread evenly over
the jelly layer. Bake in a preheated oven at 350º for
20 to 25 minutes, or until the crumb topping
is lightly browned and the edges pull away
from the sides of the pan. Cool completely on a
wire rack before cutting into bars.
