Seafood Alfredo

  • 2 cups fresh or frozen chopped broccoli
  • 1/2 cup chopped asparagus
  • 2 tsp. olive oil
  • 1 garlic clove - minced
  • 1 medium red bell pepper - chopped
  • 1 box (16 oz.) Fettucine noodles
  • 1/2 pound small shrimp - peeled, deveined and cooked
  • 1 cup jumbo lump crab meat, cooked

    Alfredo Sauce

  • 8 oz. light cream
  • 8 oz. grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1 T. butter
  • 1 T. garlic powder
Preparation -
Cook the broccoli and asparaus until tender. While that's cooking, saute' the bell pepper and minced garlic in the olive oil - until tender. Mix the sauteed bell pepper/garlic mixture with the drained, cooked broccoli and asparagus; set aside. Cook the Fettucine noodles according to package directions; drain; set aside. In a large saucepan, mix the Alfredo sauce ingredients together. Cook over medium heat until well blended and slightly thickened. Stir the vegetable mixture into the Alfredo sauce. Stir in the cooked shrimp and crabmeat. Serve the seafood Alfredo sauce over the Fettucine.
