Seafood
Lasagna
- 1 (1 lb.) box lasagna noodles
- 3 T. margarine
- 3 T. flour
- 3 cups milk
- 1 cup grated Parmesan cheese
- 1/2 lb. crabmeat (imitation is okay)
- 1/2 lb. small shrimp - cooked, peeled and deveined
- 4 cups shredded Mozzarella cheese
Preparation -
Cook the lasagna according to package directions; drain and set aside. Spray a lasagna pan or a 9" x 13" or larger baking pan with non-stick cooking spray; set aside. Melt the margarine in a medium saucepan. Add the milk,
and flour and cook over medium high heat, stirring constantly, until the sauce thickens. Stir in the grated Parmesan cheese. Spread a thin
layer of this sauce in the bottom of the prepared pan. Layer these ingredients in the pan - half of the cooked lasagna noodles, half of the cooked shrimp, half of the crabmeat, 1 cup Mozzarella cheese, half of the cheese sauce. Repeat the layers. Sprinkle the remaining 2 cups Mozzarella cheese over the top. Bake in a preheated oven at 375º for 45 minutes or until bubbly, with the top layer of cheese just beginning to brown lightly. This recipe makes about 8
servings. |
