- 1/2 cup butter or margarine
- 2 cups peanut butter
- 3 cups Rice Krispies® cereal
- 16 oz. Confectioners' sugar
- 12 oz. chocolate chips
Preparation -
In a large saucepan, melt the butter or margarine. Stir in the peanut butter. Cook over medium heat, stirring constantly, until smooth. Remove from heat and stir in the Rice Krispies® and Confectioners' sugar. Shape into 1" to 1-1/4" round balls. Place on a waxed paper or parchment paper lined tray.
Melt the chocolate chips - Place the chocolate chips in a microwave safe container. Heat in a microwave oven for about 1 to 2 minutes or just until the chocolate is melted... stopping to stir at 30 second intervals so the chocolate does not scorch. Or... place the chocolate chips in the top of a double boiler and heat until the chocolate is melted.
Dip the crispy peanut butter balls in the melted chocolate - 3 separate times - to coat with chocolate.
