Funny cake is kind of a cake/pie combination, as is Shoo-fly pie. It has a cake "filling" surrounded by a pie crust. Also, like shoo fly pie, it has a "wet bottom" - a layer of chocolate goo between the pie crust bottom and the cake top.... and funny cake is very, very good!!!
bottom layer Preparation - Mix the 1 cup sugar, cocoa, water, and 1 tsp. vanilla together in a saucepan. Cook, stirring constantly, just to boilng. Reduce the temperature to low and simmer gently for 2 to 3 minutes. Remove from heat and set aside. cake & crust Preparation - Mix the sugar, butter, and eggs together. Beat for 2 to 3 minutes or until light and fluffy. Mix the baking powder and flour together. Alternately add the milk and the flour/baking powder mixture to the egg mixture. Add the vanilla and mix well. Pour the batter into the unbaked pie shells. Pour the chocolate mixture over top of the batter. The chocolate will be very runny but it will thicken and "sink" below batter as it bakes. Bake in a preheated oven at 350º for 35 to 40 minutes or until the crust is baked and the cake springs back when touched lightly in the center. Cool completely on wire racks before serving. |
