Blueberry Muffins
- 1-1/2 cups flour
- 1/2 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 cup vegetable oil
- 1/2 cup milk
- 1 egg - beaten
- 1 cup fresh blueberries
Preparation - Combine the dry ingredients and set aside. In a separate bowl, combine the oil, milk & egg. Stir into the dry ingredients. Mix by hand until all the dry ingredients are moistentened. Fold in the blueberries. Fill paper baking cups 2/3 full. Bake in a preheated oven at 375º for 20 minutes or until lightly browned. Makes 12 average size muffins or 24 mini-muffins.
