Pumpkin Muffins
- 2 cups pumpkin puree
- 4 eggs, lightly beaten
- 1 cup vegetable oil
- 1 tsp vanilla
- 1-1/2 cups sugar
- 3 1/2 cups flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 tsps. cinnamon
- 1/2 tsp. salt
- 1 cup raisins
Preparation -
Combine the pumpkin, eggs, oil and
vanilla. Beat together lightly then add the sugar and
mix well. In a separate bowl - mix the
flour, baking powder, soda, cinnamon and
salt together. Add the dry ingredient mixture to the pumpkin mixture and mix until all the dry ingredients are well moistened. Stir in the raisins. Pour
the batter into 2 paper lined or greased muffin pans, with 12 muffins each, filling each one about 2/3 full. Bake in a preheated oven at 325º for 30 minutes or until lightly browned. Makes 24 average size muffins.
