Oatmeal Raisin Cookies
- 4 cups flour
- 2 tsp. baking soda
- 2 tsp. salt
- 1 T. cinnamon
- 4 cups rolled oats
- 2 cups vegetable shortening, such as Crisco®
- 1 cup sugar
- 1 cup brown sugar, firmly packed
- 4 large eggs, lightly beaten
- 2/3 cup milk
- 2 tsp.vanilla
- 2 cups raisins
- 1 cup chopped pecans or walnuts
Preparation - Combine the flour, baking soda, salt, cinnamon, and oats in a large bowl. Mix well with an electric mixer, then set aside. Cream the shortening, sugar and brown sugar together. Add the eggs. Beat for 2 to 3 minutes at medium speed. Add the milk and vanilla and mix well. Add the dry ingredient mixture and mix again. Stir in the raisins and nuts. Drop the mixture by rounded teaspoons full onto ungreased cookie sheets. Bake in a preheated oven at 375º for 10 to 12 minutes.
