Pecan Pie Bar Cookies

    Crust-
  • 1/4 cup + 2 T. sugar
  • 3/4 cup margarine
  • 3 cups flour
  • 3/4 tsp. salt

    Filling -

  • 4 eggs, slightly beaten
  • 3 T. margarine, melted
  • 1 1/2 tsp. vanilla
  • 1 1/2 cups sugar
  • 1 1/2 cups corn syrup (light or dark)
  • 2 1/2 cups chopped pecans

Preparation -
Grease a cookie sheet that has sides. Beat sugar and margarine. Add flour and salt. Mix until crumbly. Press firmly onto cookie sheet pan. Bake at 350º about 20 minutes or until golden brown.

Mix together all filling ingredients and pour over bottom layer. Return to oven and bake until set, 20 to 25 minutes more. Cool, then cut into squares.
