Sweet & Sour Chicken
- 6 boneless chicken breast halves
- 1/2 cup flour
- 1/4 cup vegetable oil
- 1 can (20 oz.) pineapple chunks
- 1 cup sugar
- 2 T. cornstarch
- 3/4 cup cider vinegar
- 1 T. soy sauce
- 1/4 tsp ginger
- 1 chicken boullion cube
- 1 lg. green bell pepper - cut in 1"
to 1 1/2 chunks
Preparation -
Coat chicken with flour and fry in
oil til lightly browned (Remove skin
first and fry in canola oil for lower
cholesterol). Drain on paper towels and
set aside.
Drain juice from pineapple chunks.
In saucepan, combine pineapple juice,
sugar, vinegar, soy sauce, ginger, &
boullion. Bring to boil, stirring
constantly. Boil 2 minutes. Add
pineapple and pepper chunks.
Arrange chicken in a shallow pan.
Pour sauce over chicken. Bake at 350º,
covered, for 1/2 hour. Uncover and bake
1/2 hour longer. Serve over rice.
