Cream of Broccoli Soup
- 1 cup water
- 1 - package frozen broccoli cuts (10 oz.)
- 2 cups milk
- 2 cups processed cheese (velveeta or American)- cubed
- 2 chicken boullion cubes
- 1/2 cup flour
- 1 cup half & half or light cream
- croutons for garnish if desired
Preparation -
In a large saucepan, cook broccoli in 1 cup water with boullion cubes. Bring to a very low boil, reduce heat to medium low and cook about 7 minutes or until broccoli is tender. Put milk, cheese cubes, & flour in a blender. Process on medium speed. Add milk mixture to cooked broccoli mixture. Add cream. Cook, stirring frequently over medium heat until mixture is thickened. Reduce heat. Simmer about 10 minutes.
