Sour Cherry Pie
4 cups sour cherries - washed and pitted
1 1/2 cups sugar
1/4 cup flour
1/4 tsp. salt
1 T. butter
pastry for a 2 crust pie.
Preparation -
Prepare pie dough ahead of time and chill. To prepare pie - Roll 1/2 of dough and place it in a 9" pie pan. Set aside. For cherry pie filling,
combine sugar, flour and salt. In a large bowl, toss sour cherries with sugar mixture. Add a drop or two of red food coloring if desired. Pour filling into the unbaked pie shell. Dot with butter.
Roll out remainining dough for top crust. Place on top. Crimp edges together. Slit top crust in few places and in center.
Bake at 350º for 35 to 40 minutes.
