Pork Fried Rice
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped red and/or green bell pepper
- 1 T. olive oil
- 4 cups cooked long grain rice
- 1 cup finely chopped, lean, cooked pork
- 1 T. all-purpose seasoning
- 3/4 tsp salt
- 2 T. soy sauce
- 3 eggs -lightly beaten
- 1 can tiny shrimp - rinsed and drained (optional)
Preparation -
In a wok or large skillet, saute the chopped onion & chopped bell pepper in the olive oil, just until barely tender. Stir in the cooked rice, chopped cooked pork, seasoning, salt and 1 tablespoon soy sauce. Gently stir fry over medium heat to blend and heat thoroughly. Add the beaten eggs. Stir fry the eggs into the mixture. Continue frying until all the ingredients are well blended and the eggs are completely cooked. (The eggs should look like small pieces of scrambled egg.) Add the tiny shrimp, if using, and cook just until heated through. Stir in the remaining 1 tablespoon soy sauce just before serving.
