Apple Fritters
- 1 cup flour
- 1 tsp. baking powder
- 1/4 tsp. cinnamon
- 2 eggs
- 1/2 cup milk
- 2 apples - peeled and finely chopped
- 4 T. vegetable oil
- Confectioner's sugar
Preparation -
Mix the flour, baking powder and cinnamon together in a bowl, set aside. In a separate bowl, beat the eggs lightly. Stir in the milk and the chopped apples. Add the dry ingredient mixture and stir, just until blended. Heat the vegetable oil in a skilet to about 375º. Drop the batter by heaping tablepoons full into the hot oil. Fry until the fritters are golden brown. Drain the fritters on a white paper towel lined plate. Repeat with the remaining batter, using additional vegetable oil as needed. Sprinkle with Confectioner's sugar before serving.
