Bison Recipes



Bison Ribs N Sauce
This is so good and your kids will love it too!


Ingredients

2 cups of brown sugar
1/4 cup of flour
1/3 cup of water
1/2 cup of vinegar
2 tablespoons of soya sauce
2 tablespoons of ketchup
1/4 teaspoon of ground ginger
1/4 teaspoon of ground garlic

Mix the brown sugar, flour and water in a saucepan. Cook on medium heat.
Add rest of ingredients. Continue cook until mixture is thick and bubbly.
In a roasting pan, spread out the frozen bison ribs. Pour mixture over ribs so
they are covered in sauce. Cover roasting pan and cook slowly in 250'F oven until done.
Serve with steamed rice. You can also pour sauce over rice.


Good and Spicy Meatballs

Ingredients

Meatballs:
1/2 cup Corn Flake crumbs
1 pound ground bison
1 tablespoon ketchup
2/3 cup nonfat dry milk
1 teaspoon salt and a pinch of pepper
1 egg
1/4 cup grated onion
1/4 cup of water

Sauce:
2 tablespoons green relish
1/4 cup ketchup
1-7 ounce tomatoe sauce
2 tablespoons chopped onion
2 tablespoons brown sugar
1 tablespoon worcestershire sauce
1/4 cup water
1 tablespoon vinegar
pinch of pepper

Mix meatballs. Shape into 1" balls. Place in single layer in foil lined baking dish.
Bake at 400'F for about 12 mintues or till brown. Meanwhile combine
remaining ingredients in a 3 quart sauce pan. Simmer over moderate
heat about 15 minutes, stirring frequently. Add meatballs and keep hot to serve.


Bison Haystacks
(from Alberta Bison Association's Calendar)

Ingredients

1 pound of ground bison
1 can tomatoes
salt, pepper & chili powder to taste
1 can pork and beans
1 tablespoon vingear

Brown ground bison. Add remaining ingredients. Simmer until thickened.
Serve over crumbled corn chips and top with shredded
lettuce and grated cheese.
