THESE are a collection of no bake cookies that i have collected over the years from various friends, and relatives. They are great for special occasions and i put them in a colored cupcake liner to dispay them better.Everyone raves over them amd wants the recipes so i thought I would share them with you. I buy my soya margarine in the 10 lb plastic containers(tupperware type). So I have a lot of containers to store these cookies in and they all freeze well also.It is so nice to have a box of the frozen assortments in the freezer when company comes it dosent take long for them to though out to serve. SNOWBALLS 1 cup peanutbutter 1 cup choped dates 1/2 cup chopped walnuts 12 marachino cherries cut up 1/2 cup icening sugar Melt 2 Tbsp margarine and 18 marshmellos in a pan and add the rest of the ingredients above and when cooled enough roll in balls and then in coconut. CHOCOLATE COVERED CHERRY BALLS 1/2 cup Margarine 1 1/2 cups icening sugar 1/2 tsp almond extract or rum flavour 1 1/2 cups coconut Mix all together and put a little in your greased palm and roll into a ball, press flat to put a marachino cherry in centre and fold dough arround it. This can be rolled in graham wafer crumbs or like i do refrigerate until firm (next day) then in a double boiler melt about 6 squares of chocolate and a half square of parafane wax.(wax makes the chocolate firmer) Then with a hat pin or long needle dip the balls in the hot chocolate and put on wax paper for a few min to set. Put in sealed container in frig until ready to serve. When i get all the ones done that I want to make I then will mix them up in different containers for a variety. Freeze them and give them for gifts for xmas. DATE BALLS 1 1/2 cups of chopped dates 2 eggs well beaten 1 tsp margarine 1 cup white sugar Cook and stir over medium heat in frypan until thick. Remove from Heat and add 1 cup of nuts and 1 or more cups of Rice Krispies. Cool until you can roll dough into balls and roll them in coconut.Refrigerate until ready to serve CHOCOLATE BALLS 1/2 cup peanut butter 1 cup icening sugar 1/2 cup glazed cherries chopped 1 cup coconut 1 cup choped nuts 1 Tbsp margarine 1 tsp vanilla Work all together and form balls(if you are making the cherrie balls flatten these out a little to change the shape) Chill overnight in frig. Melt 4 squares of chocolate and 1/2 cup wax in a double boiler. Place the ball or square on a toothpick then dip into mixture. Place on waxed paper. Let cool 2 min and then refrigerate in containers until ready to serve. BRANDY BALLS 1/2 pound of vanilla wafers crushed 1 cup icening sugar 2 Tbsp cocoa 1 cup chopped nuts 1/4 cup light corn syrup 1/4 cup brandy or rum Combine all ingredients.
