SALADS

MY FAVOURITE SALADS







CARROT SALAD

PEAL and slice 3 lbs of carrots and bring to a boil and cook until tender but firm.
CHOP up 3 onions, 3 peppers and 6 cellery stalks
Boil i can of tomato soup and add
3/4 cup vinegar
1/2 cup oil
1/4 cup sugar
Pour over the veggies and refrigerate with a lid one for a day or two to marinate. This will keep for a while if not all eaten the first day.





BEAN SALAD

IN a collander put 1 can yellow beans drained
1 can green beans drained,
1 can lima beans drained
1 can kidney beans drained
rince thouroughly with water
ADD 1 cup onions chopped
1 cup green pepper
1 cup of cellery chopped
1/3 cup veg oil
1/3 cup vinegar
1 tsp sugar
1 tsp cellery seed
PUT in the frig in a sealed container until used, and again this will last a week or so until used up,





DEB'S JELLO

1 lge COOL WHIP
14 oz of crushed pinapple drained
500g of cottage cheese
3 oz of jello powder any flavour is fine
BLEND Cool Whip and jello powder pkg together then blend in cottage cheese and pinapple. Add nuts and some small miniature marshmellows (colored decorates nicely) Refrigerate until set





PINAPPLE COLE SLAW

SHRED a 1/4 of a head of cabbage (depending on how big a crowd you will have for a meal)
Shred 1/2 carrot and 1/2 onion and 1/4 stalk of cellery
Add 1/2 cup of crushed pinapple with the juice, 1 tsp of sugar and then add enough mayonaise or Miracle whip to moistin
AND ENJOY





CARROT RAISON SALAD

This receipe is simple but good and especially for a diet
Grate 2 cups carrots
and simmer 1/2 cup of raisons until tender just a couple min.
ADD to carrots, and add 1/3 cup of dressing, preferable diet dressing. Makes a real nice side dish





AMBROSIA

IN a bowl add a 10oz tin of manderin oranges drained
1 can of Pinnapple chunks drained
1 cup of shredded coconut
1 cup miniature colored marshmellos
1/4 cup wallnuts chopped
6 to 10 marachino cherries cut in half
1/2 cup sour cream
1/2 cup of miracle whip or coolwhip (i have used both) mix all together and refrig until needed.
Decorate with a few cherries on top.





POTATO SALAD

Cook and cubed 3 cups potatoes cold
4 hard boiled eggs chopped and save a few slices for the top
1 small onion chopped or 4 green onions chopped
1/2 cup chopped cellery
2 apples peeled and choped in squares
6 radishes sliced (optional)
1/2 pepper chopped (optional)
1/2 cup chopped cucumber (optional)
chopped chives and mint(in the summertime)

IN a small bowl mix up 1 cup salad dressing
1/4 cup milk
1 Tbsp mustard and Salt and pepper
MIX all together and mix with the veggies lay some egg slices on the top and sprinkle Paprika over the top





HOT GERMAN POTATO SALAD

PEEL and cook 4 med potatoes and when cooled cut in slices or squares.
In a frying pan put 4 slices of bacon cut in small pieces,
1/4 cup finely chopped onion,
2 Tbsp oil or marg,
brown until cooked and pull aside,
and into the juice add 2 Tbsp flour,
1/4 cup cider vinegar
2 Tbsp Brown sugar,
1/4 tsp celery seed,
salt and pepper to taste.
If this is to thick, add a little water and stir in the bacon and onion mix, and the potatoes heat through stirring untill hot.
ANOTHER POT LUCK SUPPER FAVORITE



BROCCOLI SALAD

1 bunch broccoli choped
1 small onion
1/2 cup raisons (or as desired)
1/2 cup chopped peanuts or cashews

Dressing
5 slices of cooked bacon crumpled
1/2 cup Miracle Whip
1 tsp wine vinegar
3 tsp sugar
refrig over night



10 DAY COLE SLAW

1 lge head cabbage chopped
1 lge onion chopped
1 green pepper chopped
1 tsp salt
3 chopped carrots (optional)
this is easier if all put through a food processor and then set in bowl for a hour

Bring to a boil and boil 1 min
3/4 cup vegetable oil
1 cup white vinegar
1 tsp salt
3/4 cup white sugar
1 tsp celery seed

WHILE still boiling pour over cabbage mixture and stir in.
This will keep indefinately in a covered dish
Drain off liquid as you use it. Syrup can be reheated and used again.

This receipe is used on buffet tables in restraunts and if used for a wedding will feed 25 people generou sly.



Creamy Coleslaw

1 head of cabbage lge sliced using knife
3 med carrots diced
1 lge onion diced
3 sticks of celery diced
2 green peppers diced (small)
1/2 cup sugar
8 oz crushed pinapple
12 oz sour cream
8 oz mayonaise
1/2 pint half and half cream
1/4 - 1/2 c white vinegar
2 tbsp mustard powder
4 tbsp pepper
4 tbsp salt
little garlic pinch powder

This also used for lge crowds or restraunt as my son was a chef.



TURKEY'S SOUTHERN DISH

3 cups chopped cooked chicken or turkey
4 boiled chopped eggs
5 stalks thinly sliced celery
1 bunch mild green onions chopped fine
1/2 cup slivered almonds
salt and pepper to taste
sliced grapes or apples to taste
Mix all together and blend in mayo or salad dressing enough to mix
Serve on a bed of lettuce or crusant rolls.
