Delicious Low Fat Bran Muffins

3 cups of all bran cereal
1cup boiling water
1cup sugar
3/4 cup applesauce (unsweetened)
1/2 cup egg substitute
2-1/2 cups whole wheat flour
2-1/2 tsp baking soda
1/2 tsp salt
2 cups skim milk

Pour hot water over cereal (let stand). Mix together remaining ingredients then add cereal. Spray muffin tins with Pam. Fill 1/2 full. You should get close to 40 muffins. Bake these at 400 degrees for 15-20 minutes.

**This batter will last up to 3 weeks in the fridge. This way you can make them "piping hot"....ENJOY.
