Boiled Brisket of Beef

3 lbs. beef brisket
2 carrots, peeled and quartered
1 large onion, cut up
1 celery, cut up
1 bay leaf
salt and pepper

Place meat into large pot with cold water . Add all the other ingredients. Bring to a boil, skimming off the foam. Cover and reduce heat. Simmer for 2½ hrs. or until meat is tender.
