Carrot Cake

3 cups shreaded carrots
4 eggs
1 cup vegetable oil
2 cups flour
2 cups sugar
1 cup walnuts
1 tsp. Vanilla
1 tsp. Cinnamon
1 tsp. Baking soda
pinch of salt

Mix all the ingredients together. Grease either an angelfood pan or a big rectangular pan. Bake at 350 degrees for 1 hour. Optional: Buy a can of cream cheese frosting to ice the cake with.
