Coconut Butterballs

1 cup all-purpose flour
1/2 tsp. salt
1 cup butter, at room temperature
1/2 cup powdered sugar
2-1/2 tsps vanilla extract
1-1/2 cups flaked coconut
Extra powdered sugar for rolling
* Walnuts (opt.)

Combine the flour and salt. In a large bowl, cream the butter and powdered sugar. Beat in the vanilla. Gradually blend in the dry ingredients. Fold in the coconut. Cover and chill for 4 hours. Preheat oven to 350 degrees. Pinch off walnut sized pieces of dough and roll into balls. Place each ball 1 inch apart on ungreased cookie sheets. Bake for 10-12 minutes until lightly colored. Transfer to a wire rack to cool. Just before serving, roll balls in powdered sugar. (This makes about 3 or 4 dozen cookies)
* Walnuts can also be easily added for a great taste. When pinching off a piece of dough, put a whole shelled walnut in the middle and roll into a ball coving the nut completely. Then follow the remaining directions.
