Curry Sauce

3 Tbs. oil
1-3 Tbs. curry powder (adjust for spicyness)
1 medium onion, chopped
3-5 cloves of garlic
1 small can of tomato sauce
1 cup chicken stock or water

Saute in oil the curry, onion and garlic in a heavy sauce pan for 5 minutes. Add tomato sauce and stock. Simmer for 20 minutes. Serve over cooked vegetables, rice, pasta or as a soup base.
