Memaw's Famous Pound Cake
by Darla R.
This is my grandmother's favorite recipe for pound cake. She has tried many different recipes, but always comes back to this one. This batter can be also poured into a sheet pan or round pans to make regular layer cakes and then frost with a buttercream icing.

1 cup Crisco shortening (the solid kind in the can)
2 cups sugar
4 eggs
Sift together 2-1/2 cups all purpose flour with ½ cup self rising flour for a total of 3 cups flour
1 cup milk
1 teaspoon vanilla OR ½ teaspoon vanilla and ½ teaspoon lemon flavoring

Using an electric mixer, cream together the Crisco and eggs until smooth. Add sugar and 1 cup of the flour mixture and beat for about 1 minute. Add the rest of the flour and milk. Mix. Finally, ad the flavoring and mix through lightly. Pour into a bundt pan that has been greased and floured (Memaw uses "Baker's Joy" spray that has grease and flour already mixed together - works great! I've used it too). Bake at 325 for about 1 hour, then turn oven up to 350 for 5 min. Watch at around 45 minutes to make sure it's not getting too brown. If it is, then go ahead and turn up the oven right then for the last 5 minutes of cooking.
