Tuscan Medley

This is a very simple peasant dish my Great Grandmother Michaelina used to make.

Red skin potatoes, cut into thin slices
1 onion, sliced thin
2-3 Tbs. Olive oil
1 cup of string beans, cut into inch pieces

Saute in olive oil the potatoes and onions until potatoes are brown. Then add the green beans. Saute another ten minutes and serve.
