Ingredients:
potatoes(cubed and fried)
5 cloves of garlic
6 shallot
6 dried chillies
5 Tablespoon oil
2 sprigs of curry leaves
1cm cinnamon stick
2 cloves
2 drumstick (about 500-600 gram) cut into pieces
1/2 cup of thick coconut milk (squeezed from 1/2 grated coconut)
1 cup of thin coconut milk (squeezed from 1/2 grated coconut)
*thick coconut milk should be squeezed first, hence it's thick
salt to taste
Method:
1. Blend the first three ingredients with some water in a blender till it becomes pasty.
2. Fry the paste together with curry leaves, cinnamon stick and cloves.
3. Fry till you see oil is separated from the ingredients, presence of redish oil is a good sign.
4. Put in the chicken pieces, fry till it's cook or almost cook.
5. Put in thin coconut milk, and let it boil for about 4 mins in medium fire.
6. Put in the fried potatoes.
7. Lastly, put in thick coconut milk, and salt to taste.
8. Ready to be served.
