Jam Cake



5 eggs, beaten
2 cups white sugar
3 cups flour
1 cup butter (= 2 sticks)
1 cup buttermilk
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon cinnamon
1 ½ teaspoon cloves
1 ½ teaspoon allspice
1 cup white raisins or dates
1 cup chopped nuts (pecans or walnuts)
1 cup seedless blackberry jam


Cream butter and sugar together until light and fluffy. Add beaten eggs.

In separate bowl, sift flour, salt, and spices.

Dissolve baking soda in cup of buttermilk. Combine with butter and flour mixtures and beat.

Add fruit, nuts, and jam last. Stir well.

Pour into greased and floured pans (I use 2 round pans or 1 large bundt pan). Bake in pre-heated 350 degree oven for 40 minutes or until toothpick comes out clean.

When cooled, frost with caramel icing.
