Pumpkin Soup Brings Spice and Warmth to any Gathering!
Halloween Party Officials are proud to announce the Official Soup of the Halloween Party. While many fine entries were considered for this achievement, few rose above the crowd quite the way Pumpkin Soup did.
"The hearty pumpkin flavor, succulent spices, and bits of vegetables and ham," stated one Judge, "were a pleasant surprise to all who tried the Pumpkin Soup."
Officials were pleased to note nearly unanimous favorable response to the Soup, and proudly announce guidelines for Party Members to make their own delictable entries.
Ingredients: 1 8-lb pumpkin, 42.75-ozs chicken broth, 2 baking apples (peeled, cored, chopped), 1 chopped carrot, 2 tsp. grated gingerroot, 1 tsp. curry powder, .5 tsp. ground cumin, 6 slices bacon, .25 cup chopped onion, 2 Tbsp. sugar, 1 cup croutons.
Pumpkin Preparation: Pre-heat oven to 375 degrees. Slice off top quater of the fortunate gourd, scooping out pulp and seeds. Place pumpkin on baking sheet and bake for about one hour, when the flesh scoops out easily. Leave walls .75" thick, scooping out about four cups from the walls only(!).
Going to Pot Combine flesh, broth, apples, carrot, ginger, curry, and cumin in a large pot. Bring to boil and simmer until veggies are tender. Process in blender until smooth. Ladle soup into pumpkin and bake for 20 minutes @ 375 degrees.
Coup de gras Cook bacon until crispy, then cook the sugar and onions in the bacon's drippings. Crumble bacon and add with croutons to skillet, adding the entire mixture to the soup.
