Did you know that mint is good for blood circulation? It is high in Vitamin C and also helps to freshen your breath. You can prepare a healthy meal using mint. Look below for a great tasting starter.

 

 

Ingredients:


1 small cantouloupe melon, weighing about 1kg or 2 1/4 lb
2 pink grapefruits
1 yellow grapefruit
5ml or 1 tsp Dijon mustard
5ml or 1 tsp rasberry or sherry vinegar
5ml or 1tsp honey
15ml or 1tbsp chopped fresh mint
srigs of fresh mint to garnish

To make:

Halve the melon and remove seeds with a teaspoon . With a melon baller, carefully scoop the flesh into balls.

With a sharp knife, peel the grapefruit and remove all the white pith. Segment the flesh by cutting between the membranes, holding the fruit over a small bowl to catch any juices.

Whisk the mustard, vinegar, honey, chopped mint and grapefruit juices together in a mixing bowl. Add the melon balls together with the grapefruit and mix well. Chill for 30 minutes.

Ladle into four dishes and serve garnished with a sprig of fresh mint.
