Good for 3 spuares from the kitchen of Nels Cline
Ingretiants: 6 good tomatoes (if you can get vine ripened/ organic tomatoes of good quality- bail out) 2 onions (type: your call) 8 serrano chiles 4 whole or 1 container of jarred or canned jalapenos ( Mexican Del Monte is killer!) 1 lump of cilantro 1/2 lemon 1/2 tsp of ground cumin 1 tsp salt (or to taste)
Chop everything up real good & throw in a bowl. I like serranos finely chopped & jalapenos big chunks (be sure not to get autoerotic after chopping chiles). Leave cilantro leaves whole, but the stems are good too. Squeeze lemon on pile. Add salt & cumin to taste. Stir and let sit overnight. Don't wimp out on the chiles or it won't be festive enough! For that holiday look, try serving with red yuppie tortillia chips.
