ANNA’S LEMON HONEY

  • 4 eggs lightly beaten
  • 4 lemons-remove juice & grate rind
  • ˝ LB butter
  • 1 LB sugar

Put juice/ rind, butter and sugar into a double boiler
or a saucepan with a bowl on top of it.

In the bowl mix in the egg and the bring the water to boil
and keep stirring until the mixture thickens.

STIRRING constantly so the mixture doesn’t settle.

When the mixture gets to a thick consistency about 10 –15 minutes

Pour into airtight jars
that have been cleaned with boiling water, and keep in the fridge.

Lasts about 8 weeks.
