Ingredients:
2c. Elbo-roni, uncooked
2c. Zucchini slices, cut in half
1/2c. Bell Pepper strips, cut into 1" pcs.
8 Bacon slices, cooked crispy, then crumbled
3 Hard-cooked Eggs, chopped
1t. Dried Oregano, crushed
1/2 t. Onion powder
1/2 t. Pepper
3/4 # Velveeta cheese, cubed
3/4 c. Mayonaisse
3 T. Milk
2 t. MustardMixing instructions:
Cook macaroni. Drain. In large bowl, combine macaroni, zucchini, bell peppers, bacon, eggs and seasoning; mix lightly.
In med. sauspan, combine cheese, mayo, milk and mustard; stir over low heat until cheese is melted. Combine with macaroni mixture. Toss lightly.
Chill 3-4 hours, stirring occasionally.
Makes 6-8 servings.Note: I substitute ingredients sometimes and I also double it. It's always good, I think - one of my favorite recipes. Hope you enjoy it too!
